Abstract : The pomegranate is grown in many area of Kingdom of Saudi Arabia . it is considered as one of the oldest known mentioned in the holy Quran. It is edible fruits due to its high biological value. The aim of the this study is to extract and determine the pectin and tannin contents of pomegranate ( seeds and peels). The results obtained showed that analysis of pomegranate juice showed that, humidity (8.2%), protein (1.8%), carbohydrate (75.75), lipids( 93.22%) , pectin (9.6%), and ash (0.05%). Also, total sugar, reducing sugar and non reducing sugar were 13.30%, 12.8% and 0.5 % respectively. Also anthocyanin was 29%. Addition of ascorbic acid to juice increased its biological value due to inhibition oxidation of polyphenol compounds. Also heating reduced the level of anthiocyanin. The pectin level obtained from peel is relatively higher and can be used in industrial products as juices and jelly.
