Abstract : The study was conducted to study the effect the time and location on the microbiological quality of falafel sandwiches. Samples of 70 site from various Jeddah municipalities subsidiary, which represent 10% of the total Jeddah municipalities outlets were collected for a period of six months, divided into winter and summer and to estimate Total viable count ,Staphylococcus, coliform, fecal coliform, salmonella,. As well the fulfillment of health regulation of food handling will be assessed using assessment form of these regulation consistence with the official health regulation of workers and food handling , Study found that highest number Total viable count was in Buraiman municipality with (1014444Cell\gm) and lowest number in Jeddah aljadedah with (333333cell\gm) , the highest number of the salmonella was in Almata municipality with (224cell\ gm) and lower number in Jeddah aljadedah municipality with (40cell\ gm) , the highest number of Staphylococcus was in Jeddah aljadedah municipality with (5055cell\gm) and lower number in Ubhor municipality with (1733cell\gm) , the highest number of the coliform was in Jeddah aljadedah municipality (71111cell\gm) and lower number in Almata municipality with (32888cell\gm) , the highest number of the fecal coliform was in Aljanob municipality (34703cell\gm) and lower number in Almata municipality with (4666cell\gm)
